I think the Chevy is good as a starter. I personally would pick the Rambler though, they are so underrated and rare even though they sold so great back then.
The Rambler, Falcon & Dart are all good cars, but the Nova would be the best one for a first time classic buyer. Parts are easy to get for the Falcon, but they are expensive (as most Ford parts tend to be). While the AMC and the Dart would be different, parts for them can be difficult to get and can be even more expensive. Both the Ford and the Dodge can be difficult to work on, because Fords and Dodges are just difficult to work on. The AMC and the Nova are easier to work on and the popularity of the small block Chevy engine means getting help will be extremely easy. With all that in mind the correct answer is: Buy the one that makes you smile the most!
I own a 1961 Ford Falcon, however I think the Chevy is a good starting point. Early Falcons have to many weird things that were changed year to year. Also, they are not as interchangeable with early Mustangs as many people believe.

Ford Mustang, plenty of original parts and reproduction parts available. Also a lot of clubs all over to help you out.
And if you get one early enough, you'll basically have a Falcon.
As a Ford guy I would say the Falcon. When it comes to parts and prices I would recommend the Chevrolet.
