i will have to go with need for speed for 1 reason only. its beacause i grew with it, and this game was what started my love for cars and for racing in general
From a personal perspective, it would have to be the Gran Turismo series. Was given a copy of the original back in '98 for Christmas, and it really kicked off my obsession. Tuning, JDM weirdness, collecting - all massively appealing. Yes, the more recent entries to the series are heavily flawed (chase the rabbit style 'racing', and those AWFUL sound effects for starters), but the actual driving still feels nuanced and engaging (especially when paired with a wheel). So it gets my vote based on personal affinity, but Polyphony needs to step up their game if they want to stop getting murdered by the Forza franchise!
The Most "realistic"... hard to say. BeamNG.drive probably "could" be if it ever gets developed. It is intentionally trying to make ALL the physics (including crashes) as real as possible. It shows promise, but who knows
